Let’s celebrate the 5th day of Hanukkah with Potato Latke recipe! Who doesn’t love the the deliciousness of a perfectly made potato latke! I know, I do.
And really don’t we all love anything fried?
I am sharing the recipe my family has been using since my great-grandmother maybe even longer. It’s as delicious as they come. If I am able to make them yummy, you can too!

Ingredients:
- 5 large red potatoes, peeled
- ¼ teaspoon lemon juice
- 1 medium onion, peeled
- 3 eggs
- ½ teaspoon salt, or to taste
- ¼ teaspoon pepper, or to taste
- 3 tablespoons matzo meal
- Vegetable oil for frying
- Good Food processor– I use a ninja. The stronger food processor the better. You can want the potatoes really grated well.
Using your food processor grate potatoes; add lemon juice to keep from turning dark. Grate onion and mix with potatoes.
Drain off the liquid. Add remaining ingredients.
Make the mixture into patties, drop them into the heated oil in the skillet. Use the mixture quickly, or it will darken.
If the potatoes fall apart in the hot oil, add more matzo meal.
Makes: 10-15 latkes
Make sure to serve your potato latkes with applesauce or sour cream.
I still need to make these. I have a feeling I’ll fail miserably…but still with a try!
